Craving something sweet but keeping an eye on what you eat? Make this apple souffle that skips table sugar but keeps all the pleasure. It bakes up light and cloudlike thanks to apple pectin doing quiet hero work, and you get to choose your sweetness level with honey or stevia. It is gentle, fragrant, and satisfying without feeling heavy.

What you need

  • 4 medium apples, ideally sweet-tart
  • 2 large eggs, separated
  • 3 tbsp honey or stevia, to taste (adjust to your apples)
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Juice of 1/2 lemon (keeps the apples bright)
  • Butter, for greasing the molds
  • Breadcrumbs or unsweetened coconut flakes, for dusting the molds (optional)

Make the apple base

Peel the apples, core them, and cut into small cubes. Toss with the lemon juice so they keep their color.

Slide the apples into a saucepan with 2–3 tbsp water. Cover and cook over low heat for 10–15 minutes until soft. Puree until completely smooth, then let the puree cool to room temperature.

Build the souffle

Whisk the egg yolks with the honey (or stevia), vanilla, and cinnamon until lightly foamy. Fold in the cooled apple puree until the mixture looks even and silky.

In a clean bowl, beat the chilled egg whites with a pinch of salt to stiff peaks that hold their shape. Add the whites to the apple-yolk base in small portions, folding gently from bottom to top so the mixture stays airy.

Bake

Heat the oven to 180 C. Butter your ramekins or small baking dishes, then dust with breadcrumbs or coconut so the souffle releases cleanly.

Fill the molds three-quarters full; the mixture will rise. Bake for 20–25 minutes until the tops turn golden. Keep the oven closed for the first 15 minutes to let the rise set. The surface should spring back lightly when touched.

Serve it right

Serve warm or cooled, topped with fresh mint, a few berries, or a spoon of plain yogurt. Simple, light, and just sweet enough.
