Crispy outside, melty inside, and ready by the time the opening credits wrap. Breaded cheese sticks are my go-to when friends appear with tea, beer, or a streaming queue. Simple pantry staples, quick prep, big payoff.
What you need
- Hard cheese — 250 g
- Eggs — 2
- Milk — 2 tbsp
- Breadcrumbs — 100 g
- All-purpose wheat flour — 3 tbsp
- Salt — a pinch (optional)
- Vegetable oil — 150 ml (for frying)
Shape the cheese
Cut the hard cheese into long batons about 1 x 1 cm thick. This size fries evenly and holds together well. If the cheese feels too soft to slice cleanly, chill it in the freezer for 10–15 minutes first to firm it up.
Set up the breading station
Three shallow bowls make life easier. In the first, stir together the flour and a pinch of salt. In the second, whisk the eggs with the milk until smooth. In the third, pour in the breadcrumbs; herbed breadcrumbs add a nice aromatic kick.
Coat for crunch
Work one stick at a time: flour first, then a dip in the egg mixture, then a thorough roll in breadcrumbs. Aim for an even, snug coat on all sides. Lay the breaded sticks on a plate and let them rest for 5 minutes so the coating sets.
Fry to golden
Heat 150 ml of vegetable oil in a deep skillet or saucepan. You want enough depth for the sticks to sit about halfway submerged. Fry in batches for 1–2 minutes per side until the crust turns golden. Keep the oil at a steady medium heat so the breadcrumb crust browns as the cheese inside turns beautifully stretchy.
Finish and serve
Move the fried sticks to a paper towel to wick away excess oil. Serve immediately while the cheese is at peak pull and the crust stays crisp. Great with tomato sauce, sour cream, or mustard.
