If dinner needs to feel a little special without turning your kitchen into a sauna, pan-seared salmon or trout steaks are the move. What you need
Four steaks of salmon, trout, or semga, about 180–200 g each; 2 tbsp olive oil; 1 lemon; 3–4 sprigs fresh dill; 2 sprigs fresh thyme; about 1/2 tsp salt; freshly ground black pepper. Keep a few extra lemon slices and some fresh herbs for serving.
How to cook it
- Prep the fish: Rinse the steaks under cold water and pat them completely dry with paper towels. This is what helps you get that crisp, appetizing crust. Season both sides generously with the salt and black pepper.
