Crisp cucumbers, juicy cherry tomatoes, feta and olives are fueling a Mediterranean salad boom with bright crunch and briny bite.

Here is a bright, no-fuss salad that actually eats like a meal. Think crisp cucumbers, sweet cherry tomatoes, briny olives, creamy feta, and a clean lemon-oregano hit over a bed of crunchy greens, with a little ham to make it satisfying. It is called Slovenian salad, it builds fast, looks great on the table, and it delivers that fresh, crunchy bite I always want from a salad.

What you need

  • Cucumbers - 2 medium (about 200 g)
  • Cherry tomatoes - 150 g
  • Red or yellow bell pepper - 1
  • Red onion - 1/2 small
  • Ham - 150 g
  • Feta cheese - 80 g
  • Pitted olives - 50 g
  • Lettuce leaves (iceberg or romaine) - 80 g
  • Olive oil - 3 tbsp
  • Lemon juice - 1 tbsp
  • Dried oregano - 0.5 tsp
  • Salt - a pinch
  • Freshly ground black pepper - a pinch

How to make it

Start with the base. Rinse the lettuce well, pat it completely dry with paper towels, and lay the leaves in an even layer on a large platter. This gives you a fresh, crisp foundation and a better-looking salad.

Prep the vegetables. Slice the cucumbers into half-moons. Halve the cherry tomatoes. Seed and trim the bell pepper, then cut it into thin strips. Slice the red onion into fine half-moons. Scatter everything over the lettuce in whatever pattern makes you happy; the mix of shapes and colors is half the appeal.

Add the protein and the briny bits. Cut the ham into thin batons or small cubes and distribute it evenly. Leave the olives whole or halve them if you prefer smaller bites, then dot them across the top. Crumble the feta with your hands or cut it into small cubes and sprinkle it over everything.

Make the dressing. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, a pinch of salt, and a pinch of black pepper until it looks glossy and combined.

Finish and serve. Drizzle the dressing over the salad right before it hits the table, then gently toss directly on the platter so you keep the vegetables intact. Serve immediately for maximum crunch and bright flavor. Weeknight-friendly, party-worthy, and yes, guests will ask for the recipe.
