What you need

  • Wheat flour - 250 g
  • Softened butter - 100 g
  • Sugar - 100 g
  • Egg - 1
  • Orange - 1 (you will use the zest and about 2 tbsp juice)
  • Ground almonds - 50 g (or almond flour)
  • Baking powder - 0.5 tsp
  • Salt - a pinch

How to make it

Start with the orange. Wash it well, pat it dry, and finely grate the zest. Keep it light and bright; avoid the white pith since that brings bitterness. Halve the orange and squeeze out roughly 2 tablespoons of juice.

In a mixing bowl, beat the softened butter and sugar until pale and a little fluffy. Add the egg and mix again until smooth. Stir in the orange juice and zest so the aroma winds through the batter from the start.

In a separate bowl, whisk together the flour, ground almonds, baking powder, and a pinch of salt. Add the dry mixture to the butter bowl in a couple of rounds, folding until you have a soft, cohesive dough. You want it elastic and not sticky. If it still clings to your hands, dust in a little more flour until it behaves.

Line a baking sheet with parchment. Roll the dough into balls about the size of a walnut, set them on the sheet with 3 to 4 cm between each, and press the tops gently to flatten slightly.

Heat the oven to 180 C. Bake for 12 to 15 minutes, just until the edges take on a light golden color. Keep them soft inside; this cookie wins on tenderness, not crunch.
