If plain sandwiches feel a little too plain, try the cheese-and-pineapple situation. It is sweet, salty, a little retro in the best way, and wildly fast. It also looks party-ready without any actual effort, and it is a smart way to use that half-can of pineapple left from the holidays.

What you need

  • Toast bread or baguette — 6–8 slices
  • Hard cheese (Gouda or Emmental work well) — 120 g
  • Canned pineapple (rings or cubes) — 6–8 pieces
  • Light mayonnaise — 2 tbsp
  • Garlic — 1 clove
  • Lettuce leaves — 3–4 (optional)
  • Fresh herbs (parsley or dill) — a few sprigs for garnish

How to make it

Start with the punchy part: peel the garlic and press or finely grate it, then stir it into the mayonnaise. That quick garlic mayo is your flavor base.

Toast the bread in a dry skillet or a toaster until lightly golden. If you are using a baguette, slice it thinly first and give each slice a brief toast so the base stays crisp under the toppings.

Spread a thin layer of the garlic mayo on each slice. Add the cheese either in thin slices or coarsely grated, whichever you prefer.

If your pineapple comes in rings, cut each ring into halves or quarters so it sits neatly on the bread. Place a piece of pineapple on top of the cheese.

For extra freshness and a slightly dressier look, slide a lettuce leaf onto each slice before the cheese. Finish with a little flourish of fresh parsley or dill on top.

Serve it right

Serve immediately while the bread is still crisp and the pineapple is juicy. These open-face bites play nicely with a glass of sparkling wine for something celebratory, or a cup of fruit tea when you want cozy with a side of brightness.
