What you need

  • Carrots, peeled — 160 g
  • All-purpose flour — 200 g
  • Eggs — 2 large or 3 small
  • Sugar — 100 g
  • Neutral oil — 100 ml
  • Walnuts — 75 g
  • Ground cinnamon — 1/4 tsp
  • Baking powder — 10 g
  • Salt — a pinch
  • Optional: powdered sugar for dusting — 1 to 2 tsp

How to make it

Step 1: Prep the nuts. Roughly chop the walnuts and toast them in a dry skillet over medium heat for 2 to 3 minutes until they smell amazing. Take them off the heat and let them cool.

Step 2: Build the base. In a large bowl, whisk the eggs with the sugar until the mixture looks a touch lighter and the sugar has mostly dissolved. Pour in the oil and whisk again until smooth and slightly glossy.

Step 3: Combine the dry ingredients. Sift the flour with the baking powder, cinnamon, and a pinch of salt. Add the dry mixture to the bowl in a couple of rounds, mixing gently each time so you get a smooth batter without lumps.

Step 4: Fold in the good stuff. Finely grate the carrots. Stir the grated carrot and cooled toasted walnuts into the batter until evenly distributed.

Bake

Heat the oven to 180 C. Grease and flour your baking pan, or line it with parchment. Scrape in the batter and smooth the top so it bakes evenly.

Bake for 40 to 45 minutes. Check doneness with a wooden skewer; it should come out dry, without wet streaks of batter.

Finish and serve

Let the cake rest in the pan for a short while, then transfer it to a rack to cool completely. Dust with 1 to 2 tsp powdered sugar if you like a clean finish.
