Juicy meatballs, tender pasta, and a silky milk sauce all in one pan. It is cozy, it is weeknight-friendly, and yes — even the dishes get a break. This is the kind of family meal that never starts an argument, because it lands right in that sweet spot: simple, creamy, and properly satisfying.

What you need

  • 250 g short pasta (elbows, penne, or shells work best)
  • 300 g ground meat (pork + beef mix, or chicken)
  • 1 small onion
  • 1 garlic clove
  • 500 ml milk
  • 1 tbsp wheat flour
  • 1 tbsp vegetable oil
  • 1 tsp butter
  • Salt to taste (about 0.5 tsp)
  • Ground black pepper
  • A pinch of nutmeg (optional)
  • Fresh dill or parsley, for serving

How to make it

Step 1: Make the meatballs. Finely chop the onion and garlic (or grate them if you want them to melt right in). Mix both into the ground meat with salt and pepper, then shape into small balls about 2 cm across. Aim for bite-size; they cook fast and stay juicy.

Step 2: Get some color on them. Heat a skillet, add the vegetable oil and the butter, and brown the meatballs on medium heat for 3–4 minutes, turning now and then until they take on a light crust.

Step 3: Build the sauce base. Sprinkle the flour into the skillet and stir it through the fat and around the meatballs. Cook 1–2 minutes, stirring constantly — this toasts the flour and sets you up for a smooth, lightly nutty sauce.

Step 4: Pour in the milk while whisking gently to avoid lumps. Bring it just to a light simmer, drop the heat, and let it bubble for 3–4 minutes until it starts to thicken. Add a pinch of nutmeg if you like that warm, creamy note.

Step 5: Pasta goes straight into the skillet. Stir in the dry pasta, cover, and cook on low for 10–12 minutes (or follow the time on your pasta package). The pasta should drink up the sauce and turn tender without going floppy.

Step 6: Taste and adjust. Add more salt and pepper if needed, give it a gentle stir, then take it off the heat and let it sit covered for 2–3 minutes so everything settles and the sauce clings.

To serve

Spoon into warm bowls and shower with chopped dill or parsley. That is it — one pan, zero fuss, maximum comfort.
