Speedy, striking, and budget-friendly, crab stick and cheese nests are the 20-minute sensation taking over weeknight dinners.

File this under weeknight party tricks: potato nests that look restaurant-level but use totally normal ingredients and go from idea to table in about 20 minutes. The base is creamy mashed potato, the center is a savory mix of crab sticks, cheese, and garlic, and the oven handles the glamour shot with a golden crust. People will ask where you ordered them from. You will smile.

What you need

  • 600 g potatoes
  • 30 g butter
  • 1 egg
  • Salt, to taste
  • 100 g hard cheese
  • 150 g crab sticks
  • 2–3 tbsp mayonnaise
  • 1–2 garlic cloves
  • Black pepper and any favorite spices, to taste

How to make them

Boil the potatoes until tender, then mash with the butter and salt. Let the mash cool until just warm, then mix in the egg. You want a thick, scoopable mash that holds its shape and does not ooze or spread.

For the filling, finely dice the crab sticks and grate the cheese. Stir them together with the mayonnaise, minced garlic, pepper, and any spices you like until the mixture is cohesive.

Line a baking sheet with parchment. With damp hands, shape the mashed potatoes into round nests: think sturdy patties with a shallow well in the center. Spoon the crab-cheese filling into each well, piling it slightly.

Bake at 180°C (about 356°F) for roughly 20 minutes, until the tops turn golden and lightly crisp.

Cook's notes

Chopped dill or green onion in the filling adds a bright, fresh note. If your mash tends to crack in the oven, mix in 1 tbsp starch (potato or corn) with the egg to help it stay smooth. Forming the nests with wet hands keeps the potatoes from sticking and gives you clean edges.

Serve piping hot with a spoonful of sour cream or a plate of fresh vegetables. Minimal effort, maximum applause.
