Turn Chicken Breast Into a Crispy-Juicy Sesame Showstopper in 25 Minutes

Craving that crispy-outside, tender-inside thing without babysitting a frying pan? This sesame-crusted chicken gets you there with almost no effort. It works just as well on a weeknight as it does when you need something that looks a little special. Bonus: sesame brings texture, flavor, and a decent hit of calcium and good fats.
What you need
400 g chicken breast (2 medium fillets); 2 tbsp white sesame seeds; 1 tbsp black sesame seeds (optional, for looks and a slightly bolder taste); 1 large egg; 2 tbsp breadcrumbs; 1/2 tsp salt; 1/4 tsp ground black pepper; 1 tsp paprika; 1 tbsp neutral oil for the baking sheet.
How to make it
- Prep the chicken: rinse, pat dry, and slice each fillet lengthwise into two thinner cutlets. Thinner pieces cook faster and take on a more even crust.
- Set up three stations. In a small bowl, beat the egg until smooth. In a shallow dish, mix the breadcrumbs with the salt, pepper, and paprika. In a second shallow dish, add the sesame seeds (mix white and black if you like).
- Coat each piece of chicken: dip in the egg, then press into the breadcrumb-spice mix, then roll in the sesame seeds. Press lightly so the seeds stay put.
- Oil a baking sheet (or line with parchment and brush with a little oil). Arrange the chicken with space between the pieces.
- Bake in a preheated 200 C oven for 20–25 minutes, until the coating turns golden and the meat is fully cooked. For doneness, pierce the thickest piece: the juices should run clear and look transparent.
