If breakfast needs a mood lift, make it smell like sunshine. These orange pancakes come out fluffy, fragrant, and a touch tangy — the kind of stack that disappears while the pan is still hot. Quick to mix, quick to fry, and a little more special than the usual. Ideal for a family morning when you want results without drama.

What you need

  • Wheat flour — 200 g
  • Kefir 2.5% — 200 ml (room temperature)
  • Egg — 1
  • Sugar — 2 tbsp
  • Baking powder — 1 tsp
  • Salt — a pinch
  • Orange — 1 large, about 200 g
  • Vegetable oil — 2 tbsp, plus a little for the pan
  • Vanilla sugar — 1 tsp

Step-by-step

Prep the orange: Wash and dry it well. Finely grate the zest, avoiding the white pith. Halve the orange and squeeze the juice. You need about 50 ml for the batter; save the rest for a quick drink later.

Start the batter: In a mixing bowl, whisk the egg with the sugar and vanilla sugar until slightly foamy. Add the room-temperature kefir and the 2 tbsp of vegetable oil. Stir until smooth.

Combine dry ingredients: In another bowl, blend the sifted flour with the baking powder and salt. Gradually whisk the dry mix into the wet base, going gently so it stays smooth and lump-free.

Bring in the citrus: Stir in the orange zest and the 50 ml of juice. Aim for a thick, pourable batter — like medium-fat sour cream. Let it sit for 5–7 minutes so the baking powder does its thing and the zest opens up.

Cook: Heat a skillet over medium and lightly oil it — a couple of drops brushed around is enough. Spoon in small rounds, about 8–10 cm across. Fry for 2–3 minutes per side until golden. Flip with care to keep that height and softness.

Serve: Get them to the table hot with sour cream, honey, jam, or sweetened condensed milk. Coffee or tea on the side makes the citrus sing. Expect an empty plate situation, fast.
