This Vibrant Beet Hummus Will Steal the Show and Supercharge Your Healthy Menu
Ready in minutes and packed with nutrients, this crowd-pleasing staple elevates crisp veggies, warm bread, and just about everything on the table.
I like dips that pull double duty: look good, deliver real nutrition, and make a snack plate feel like a plan. Enter beet hummus. It is a bright, silky twist on the classic, where beet brings folate and antioxidants, chickpeas keep you satisfied, and the color earns compliments before the first scoop.
Why this version earns a spot on your table
It is simple to make, easy to customize, and plays nicely with vegetables, pita, and crispbreads. If you have time, roast the beet in foil for a deeper, sweeter flavor. Boiled beet works too, just a bit milder.
You will need
- Beet, cooked or roasted — 200 g
- Chickpeas, cooked — 250 g (canned works)
- Tahini (sesame paste) — 2 tbsp
- Lemon juice — 2 tbsp
- Garlic — 1-2 cloves
- Olive oil — 3 tbsp
- Ground cumin — 1/2 tsp
- Salt — 1/2 tsp or to taste
- Ground black pepper — a pinch
- Water or liquid from canned chickpeas — 50-70 ml, as needed
Prep first
Working with dried chickpeas? Soak them for 8-12 hours, then simmer until tender, about 1-1.5 hours. Cool completely.
Cook the beet by boiling or roasting in foil until fork-tender. Roasted beet gives a richer result. Cool before blending.
Blend it up
1. Add chickpeas, beet, tahini, lemon juice, and peeled garlic to a blender or food processor. Sprinkle in cumin, salt, and pepper, then pour in the olive oil.
2. Blend until smooth and cohesive. Stream in water or chickpea liquid a little at a time until the texture turns creamy and spreadable.
3. Taste and tune: more salt for savoriness, an extra splash of lemon for brightness, or a touch more cumin if you like the spice to shine.
Finish and serve
Spoon the hummus into a bowl, create a few shallow swirls, and drizzle with a bit more olive oil. For a finishing touch, dust with ground cumin or paprika, or scatter chopped parsley or cilantro.
Serve cool or at room temperature with sliced cucumber, carrot, and bell pepper, warm pita, whole-grain crispbreads, or crunchy breadsticks. It is a fresh, colorful swap for the usual spreads and an easy win for weekday snacking or last-minute guests.
