You will need

  • Pork liver — 500 g
  • Onions — 2 pcs (about 150 g total)
  • Carrot — 1 pc (about 100 g)
  • Sour cream, 15% fat — 150 g
  • Water or broth — 100 ml
  • Wheat flour — 1 tbsp
  • Vegetable oil — 2 tbsp
  • Salt — to taste
  • Ground black pepper — a pinch
  • Bay leaves — 2
  • Fresh parsley — a few sprigs for serving

How to make it

Step 1. Prep the liver. Rinse the pork liver under cold water, trim off membranes and any large ducts, then cut it into bite-size cubes, about 3x3 cm. For extra tenderness and a cleaner flavor, soak the pieces in milk for 30 minutes. Drain well in a colander so extra liquid does not follow you into the pan.

Step 2. Build the base. Slice the onions into half-moons and coarsely grate the carrot. Heat the vegetable oil in a deep skillet. Sauté the onions until translucent, then add the carrot and cook 3–4 minutes until soft and fragrant.

Step 3. Sear the liver. Add the liver to the pan and stir. Cook over medium heat for 5–7 minutes until lightly browned on all sides. Sprinkle in the flour and fold it through; this sets you up for a sauce that turns velvety instead of thin.
