This Orange Juice Trick Turns Vanilla Cupcakes Irresistibly Fluffy and Fragrant
Zesty citrus meets velvety cream in a mood-boosting recipe to brighten your day and elevate teatime.
If you want something bright, soft, and very forgiving, these orange-vanilla cupcakes are the move. They smell like sunshine, taste like a hug, and require zero fancy technique. They sit nicely at a family tea, charm a kids party, and absolutely work as a treat-yourself bake on a random Tuesday.
You will need
- Flour - 200 g
- Sugar - 150 g
- Eggs - 2
- Freshly squeezed orange juice - 60 ml
- Neutral vegetable oil - 80 ml
- Vanilla sugar - 1 tsp
- Baking powder - 1 tsp
- Salt - a pinch
- Orange zest - 1 tsp (optional, for extra aroma)
- Powdered sugar - for dusting (optional)
Make the batter
Start with everything at room temperature. In a large bowl, whisk the eggs with the sugar and vanilla sugar until lightly foamy and a bit increased in volume. Pour in the oil and the orange juice, then stir until the mixture looks smooth and unified.
In a separate bowl, combine the sifted flour, baking powder, and a pinch of salt. Add the dry mix to the wet gradually, whisking or folding with a spatula as you go. If you are using the zest, stir it in now. You are aiming for a smooth, pourable batter that is not overly thick.
Bake
Heat the oven to 180°C. Prep a muffin tin by lightly greasing the cups or dropping in paper liners. Divide the batter between the cups, filling each about two-thirds full so they rise neatly instead of climbing over the edge.
Bake for 20 to 25 minutes, until the tops are golden. A wooden skewer or toothpick should come out dry. Let the cupcakes sit in the tin for a moment to settle, then move them to a plate or rack to finish cooling.
Serve
Dust with powdered sugar if you like a little extra finish. Serve warm or fully cooled, with tea, coffee, or a glass of milk. The vanilla keeps things cozy, the citrus keeps things bright, and the texture lands in that very welcome soft-and-airy zone. Even if you do not bake much, these behave nicely and deliver every time.
