This Juicy Meat-Stuffed Cabbage Roll Will Be the Star of Your Holiday Table

This is one of those dishes that looks like a centerpiece but asks very little of you. Think juicy meat tucked into tender cabbage leaves, baked in a light tomato sauce until everything relaxes and mingles. It feels festive, works for a regular Tuesday, and actually keeps you full. No drama, just a good, honest, crowd-pleasing roll-up.

The trick is simple: soften the cabbage so the leaves wrap without tearing, give the rice a head start so it finishes with the meat, and let the oven do the rest. The result is tidy little parcels that slice cleanly and taste like you put in more effort than you did.
What you need
One medium green cabbage (about 1.2 kg); ground meat, a pork-and-beef mix, 500 g; 1 yellow onion (about 80 g); 1 carrot (about 100 g); raw rice, 3 tablespoons (about 50 g); 1 egg; tomato paste, 1 tablespoon; neutral vegetable oil, 2 tablespoons; salt; a pinch of ground black pepper; sour cream for serving, 2 tablespoons. You will also need about 100 ml water to dilute the tomato paste.
Game plan
- Prep the cabbage: peel off any damaged outer leaves. Bring a large pot of water to a boil. Cut a shallow circle around the core to loosen it, then submerge the whole head.
- Blanch 5–7 minutes, turning the cabbage occasionally so it softens evenly. Lift it out, let it cool just enough to handle, then gently separate the leaves. Slice off the thick ribs at the base so the leaves roll easily.
- Par-cook the rice: rinse well, simmer until just shy of tender, about 7–8 minutes, then drain.
- Finely chop the onion and coarsely grate the carrot. Warm the oil in a skillet and sauté the onion and carrot until soft and fragrant.
- In a bowl, combine the ground meat with the sautéed vegetables, par-cooked rice, egg, salt, and black pepper. Mix until the filling is evenly combined.
- Lay out a cabbage leaf, add a portion of filling, and roll it up snugly, tucking in the sides. If your leaves are small, overlap two leaves to make a larger wrapper.
- Nestle the rolls into a deep baking dish. Stir the tomato paste into 100 ml water and pour it over the rolls. Cover the dish tightly with foil.
- Bake at 180°C (about 350°F) for 40–45 minutes. Remove the foil and bake 10 minutes more for a light, golden finish.
Serve
