This Curry-Spiked Egg and Bacon Toast Is the Breakfast Upgrade You Didn’t Know You Needed

When you want the comfort of bacon and eggs without juggling a pan full of parts, this does the job: a creamy, punchy egg salad on hot toast with crispy bacon over the top. It eats like a full breakfast but lands lighter than a stacked sandwich. The little hit of curry wakes everything up, capers keep it bright, and the herbs make it feel fresh enough for breakfast or a light dinner.
What you need
- Sandwich bread for toasting - 4 slices
- Eggs - 4
- Bacon - 150 g
- Mayonnaise - 3 tbsp
- Celery stalks - 2
- Green onions - 3 to 4
- Capers - 1 tbsp
- Parsley - a small bunch
- Curry powder - 1 tsp
- Black pepper - to taste
- Salt - for boiling the eggs
How to make it
First, cook the eggs so the yolks stay tender. Bring a pot of salted water to a boil, lower in the eggs, and when it returns to a boil, turn off the heat. Cover and leave for 10 minutes. Move the eggs straight into ice water for a couple of minutes, then peel.
Cut the bacon into small pieces and cook in a dry skillet over medium heat until crisp. Transfer to a paper towel to drain. This is your salty crunch on top, not mixed in, so the salad stays creamy.
