This Caramelized Apple Salad Is Your New All-Day Mood Booster
Simple. Stylish. Incredibly delicious. The minimalist flavor revolution has arrived.
Warm, caramelized apples in a salty-sweet salad that reads a little fancy but takes a weekday level of effort. It looks polished, tastes like you planned ahead, and yes, it is actually good for you. Apples bring fiber and vitamins to the party; blue cheese and walnuts do the heavy lifting on flavor. Simple, stylish, incredibly tasty. I am in.
What you need
- 2 medium tart-sweet apples
- 50 g arugula
- 70 g blue cheese (Dorblu or a similar style)
- 30 g walnuts
- 1 tsp liquid honey
- 2 tbsp olive oil
- 1 tsp balsamic vinegar
- Pinch of salt
- Pinch of freshly ground black pepper
How to make it
Start with the apples. Core them and slice into about 5 mm wedges. Heat half the olive oil in a skillet and sear the slices until golden, 2–3 minutes per side. Right at the end, add the honey and toss gently so every slice gets a light caramel glaze. Slide the apples out of the pan and let them cool off just a touch.
Prep the base. Rinse and dry the arugula thoroughly (paper towels do the job). Toast the walnuts in a dry pan for 1–2 minutes to wake up their aroma, then chop them roughly. Cut the blue cheese into small cubes.
Assemble. Lay the arugula on a plate. Add the warm apples, scatter over the cheese, and finish with the chopped walnuts.
Make the dressing. Stir together the remaining olive oil, balsamic vinegar, a pinch of salt, and a pinch of black pepper. Drizzle it over the salad right before serving so the arugula stays crisp and perky.
To serve
Bring it to the table while the apples are still warm. The temperature contrast with the cool greens (plus that sweet-savory balance) is exactly the kind of little drama a salad needs. Pair it with a chilled white wine or a light berry mors, the classic lightly sweet berry drink. Quick to make, big on payoff.
