What you need
- 200 g green split peas
- 1.5 L water or vegetable stock
- 1 carrot
- 1 onion
- 1 bell pepper
- 200 g broccoli
- 70 g wild garlic (also called ramsons)
- 4–5 sun-dried tomatoes
- 2 tbsp olive oil
- 5 black peppercorns
- 0.5 tsp coriander seeds
- Salt, to taste
How to make it
Start the base: Rinse the split peas, then move them to a pot with the water or stock. Bring to a boil, drop to a gentle simmer, and cook about 30 minutes until the peas are soft.
Build flavor while you wait: Grate the carrot and finely chop the onion. Warm the olive oil in a skillet with the sun-dried tomatoes, then sauté the onion and carrot until they turn golden and sweet.
Prep the greens and spices: Rinse the wild garlic, trim away any tough bits, and chop it finely. Dice the bell pepper. Break the broccoli into small florets. In a mortar, crush the peppercorns with the coriander seeds until fragrant.
Combine: When the peas are tender, add the sautéed onion and carrot to the pot. Salt to taste and let it all simmer together for 5 minutes.
Layer in the fresh stuff: Stir in the diced bell pepper and the chopped wild garlic. After about 2 minutes, add the broccoli florets.
