What you will need

Potatoes - 3 medium (about 300 g)
Green peas (fresh or frozen) - 150 g
Hard cheese - 100 g
Yellow onion - 1 (about 80 g)
Carrot - 1 (about 100 g)
Unsalted butter - 20 g
Water or vegetable broth - 1.2 L
Salt - to taste
Ground black pepper - a pinch
Fresh dill - a few sprigs for serving

How to make it

  1. Prep the veg: peel and dice the potatoes into small cubes. Finely chop the onion. Grate the carrot on the large holes of a box grater.
  2. In a pot, melt the butter over medium heat. Add onion and carrot and cook, stirring, until soft and lightly golden, about 5 to 7 minutes.
  3. Add the potatoes, pour in the water or broth, and bring to a boil. Lower the heat and simmer 15 to 20 minutes, until the potatoes are tender.
  4. Stir in the green peas. If using frozen peas, do not thaw; just add them straight in. Simmer 5 minutes.
  5. Finely grate the hard cheese. Add it gradually, stirring constantly, until fully melted and the soup turns creamy. Taste, then season with salt and black pepper as needed.
  6. Let the soup gently bubble on low for 2 to 3 more minutes. Keep it below a hard boil so the cheese stays silky and the texture stays smooth.

Serve it right

Ladle the soup hot into bowls, finish with finely chopped dill, and bring croutons or fresh bread to the party. Simple, comforting, and it looks great on the table.
