Three staples, one fast fix: sausage, cheese and dough turn into a hot, family-size breakfast in under 10 minutes.

If your mornings run on caffeine and wishful thinking, this is the kind of breakfast that actually keeps up. Sausage, cheese, dough. Minimal effort, fast payoff, and yes, quicker than fussing with a pile of sandwich slices. From the minute your puff pastry softens to the moment a full tray hits the oven, the whole thing moves fast.

What you need

  • Puff pastry — 275 g (one standard sheet)
  • Sausages — 6 regular or 12 mini
  • Cheese — 12 small pieces
  • Ketchup — 12 tsp
  • 1 egg or a splash of milk — for brushing
  • Sesame seeds — for sprinkling

How it comes together

Let the puff pastry soften just enough to unfold without cracking. Cut the sheet into 24 even rectangles. Line a baking sheet with parchment and lay down 12 rectangles as your base. Brush each base with 1 tsp ketchup, then add a small piece of cheese and a sausage on top. Using full-size sausages? Cut them in half so you still land at 12 portions.

Take the remaining 12 rectangles and cut a series of parallel slits in each (these vents look good and help with puff). Drape the slit pieces over the filled bases and press the edges with a fork to seal. Brush the tops with beaten egg or milk, then finish with a scatter of sesame seeds.

Bake at 200 C/392 F for 15–20 minutes, until golden, puffed, and smelling like the kind of breakfast that actually gets people out of bed.
