Get the pan sizzling with juicy, golden-crusted sausages—an easy, family-friendly recipe that turns any night into a crowd-pleaser.

If you want big flavor with minimal fuss, cevapcici are the move. Think juicy Balkan-style sausages made from chopped meat, kissed with paprika, seared to a deep golden crust. Doing them on a skillet is weeknight-friendly and tastes remarkably close to the grill version. Add warm flatbreads, crisp veggies, and a spoon of ajvar and you have a family dinner that feels like a small victory.

What you need

  • Ground beef and pork, 1:1 ratio — 500 g total
  • Yellow onion — 1 medium (about 80 g)
  • Garlic — 2 cloves
  • Sweet paprika (ground) — 1 tsp
  • Black pepper (ground) — 1/4 tsp
  • Salt — 1/2 tsp, or to taste
  • Sparkling mineral water — 2 tbsp
  • Vegetable oil — 1 tbsp, for frying

How to make them

1. Build the base. Finely chop or grate the onion. Press the garlic. Add both to the meat along with the paprika, black pepper, and salt. Pour in the sparkling mineral water — it lightens the texture and boosts juiciness. Mix the meat by hand for 5–7 minutes until it turns sticky and uniform. Cover and chill for 30 minutes so the flavors open up and the mixture sets.

2. Shape with purpose. Scoop 40–50 g portions and roll them into compact logs about 10–12 cm long and 2–3 cm thick. Keep them the same size so they cook evenly. Your future self will thank you.

3. Sear, do not scorch. Warm a skillet over medium heat and brush it with the oil. Lay in the sausages and cook, turning to get all sides, until they develop a rich golden crust — roughly 3–4 minutes per side. Steady heat is key; high heat will burn the exterior while the inside lags behind.

4. Finish smart. Transfer to a plate lined with paper towel to blot excess oil. Serve hot.

How to serve (and win dinner)

Bring them to the table with warm flatbreads, fresh tomatoes, cucumbers, and sweet bell pepper. A generous dollop of ajvar is classic, and a simple garlicky yogurt with herbs makes a great backup. Pan over grill on a busy night? Absolutely — the sparkling-water trick more than earns its keep here.
