They come together in about 20 minutes, look dressed for the occasion, and tend to vanish from the platter before anything else. Ideal for a holiday spread or a low-key dinner when you still want something a little extra.
What you need
- Hard cheese - 150 g, finely grated
- Boiled eggs - 3
- Crab sticks (imitation crab) - 200 g
- Mayonnaise - 2-3 tbsp
- Garlic - 1-2 cloves
- Fresh dill or parsley - 1 small bunch
- Cherry tomatoes - 8-10
How to make them
Prep the base: On a fine grater, grate the eggs, the cheese, and most of the crab sticks into a mixing bowl. Add minced garlic and finely chopped herbs for that bright, fresh lift. Spoon in the mayonnaise and mix until the mixture turns smooth and pliable. You want it to hold together without being greasy.
Make the coating: Finely grate the remaining crab sticks into a separate bowl. This crab crumb will be your outer layer and gives the balls that festive look.
Shape and fill: Scoop a portion of the cheese mixture into your palm and flatten it into a small patty. Nestle a cherry tomato half in the center (use a whole one if the tomatoes are tiny), then close the mixture around it and roll into a neat ball.
Finish and chill: Roll each ball in the crab crumb until evenly coated. Set them on a platter and chill for 20-30 minutes so they firm up and slice cleanly. Hands-on time is about 20 minutes; the quick chill just makes them look sharper.
