Grated carrot melts into the pot, turning the whole thing sunny, gently sweet, and a lot more interesting than the usual. What you need

  • Milk - 500 ml
  • Water - 100 ml
  • Semolina - 3 tbsp, lightly heaped
  • Medium carrot - 1 pc, about 100 g
  • Sugar - 1 tbsp, or to taste
  • Salt - a pinch
  • Butter - 10 g, for serving
  • Ground cinnamon - a pinch, optional

How to make it

1. Prep the carrot first. Peel it and grate it on the fine side so it softens quickly and blends evenly into the porridge. In a small saucepan, combine the milk and water. Set over medium heat and bring to a gentle simmer.

2. As the liquid starts to climb, rain in the semolina in a thin stream while whisking or stirring steadily so it stays smooth. Add the pinch of salt and the sugar, then stir again.

3. Stir in the grated carrot. Drop the heat to low, set the lid slightly ajar, and cook for 7-10 minutes, stirring now and then. You are looking for soft carrot and fully cooked, silky grains.

4. Taste. If you want it sweeter, add a touch more sugar. For a warm aroma, add a pinch of cinnamon. Take the pan off the heat, stir in the butter, and let it stand covered for 3-5 minutes so it turns extra velvety.

Serve it up

Ladle it hot into bowls. A thin carrot slice or a sprig of fresh mint on top looks sharp. Fresh fruit, a handful of berries, or a simple glass of compote play really well alongside. Warm, cozy, bright, and done before your coffee cools.
