Ingredients

White bread or baguette, 6–8 slices

Boiled potatoes, 2 medium (about 200 g)

Boiled eggs, 2

Onion, 1 small (about 50 g)

Butter, 30 g (softened)

Vegetable oil, 2 tbsp

Milk, 2 tbsp

Salt, to taste

Ground black pepper, a pinch

Fresh dill, a few sprigs for serving

How to make it

  1. Start the pate. Finely chop the onion. Warm half the vegetable oil in a skillet and cook the onion over medium heat until soft and golden. Keep an eye on it so it does not burn.
  2. In a bowl, mash the boiled potatoes to a smooth puree. Peel the boiled eggs and either grate them on the fine side or mash with a fork. Add the eggs to the potatoes.
  3. Scrape the golden onions and their oil into the bowl. Add the softened butter, milk, salt, and pepper. Mix until the texture turns creamy and even. Taste and adjust the seasoning as needed.
  4. Make the toasts. Heat the remaining vegetable oil in a clean skillet. Slice the bread into medium-thick pieces and fry them until golden on both sides, about 1–2 minutes per side. Aim for crisp outside, soft inside, and no charring.
  5. Spread the warm toasts with the pate, arrange on a plate, and finish with fresh dill.

Serve right away while the toasts are still crunchy and the pate is warm and aromatic. Simple, fast, and weirdly impressive for the effort involved.
