When I want a family dinner that feels generous without demanding the whole evening, I go straight for a roasting pan. This one is all about balance: soft, golden potatoes, juicy chicken hearts, and a warm hit of spices. It is budget-friendly, quietly nutrient-dense, and the oven does the heavy lifting while your kitchen fills with the kind of smell that pulls everyone to the table.

Why this works

Chicken hearts are an underrated staple: they cost less than most cuts and bring iron and B vitamins to the party. Potatoes deliver the comfort and energy you expect, and a quick spice blend ties it all together. Everything roasts together so the flavors mingle and the textures land exactly where they should: tender, a little caramelized, and very satisfying.

What you need

  • Potatoes — 800 g
  • Chicken hearts — 500 g
  • Yellow onion — 2 medium (about 150 g total)
  • Carrot — 1 large (about 120 g)
  • Olive oil — 3 tbsp
  • Garlic — 3 cloves
  • Paprika (ground) — 1 tsp
  • Dried rosemary — 0.5 tsp
  • Salt — 1 tsp (or to taste)
  • Black pepper (ground) — 0.5 tsp
  • Fresh parsley — a few sprigs, for serving

How to make it

Set your oven to 180 C. Peel the potatoes and cut them into large wedges so they roast evenly and keep their shape. Peel the carrot and either grate it on the large holes or slice it into thin sticks. Slice the onions into half-moons. Finely chop the garlic. Rinse the chicken hearts thoroughly under running water, trim off visible fat and any vessels, and pat them dry with paper towels.

In a big bowl, combine the potatoes, carrot, and onion. Add the olive oil, paprika, dried rosemary, salt, and black pepper. Toss until every piece looks glossy and seasoned. Spread the vegetables in an even layer in a baking dish. Scatter the chicken hearts over the top and sprinkle on the chopped garlic for that extra aromatic kick.

Cover the dish tightly with foil and roast for 40 minutes at 180 C. Remove the foil and continue roasting for another 15–20 minutes, until the potatoes turn golden and tender and the hearts pick up a light, appetizing browning.

Give everything a gentle toss right in the dish so the juices coat the potatoes, then finish with chopped fresh parsley. Serve hot.
