The One-Pan Cabbage and Mushroom Dinner That Saves Busy Nights—and Kids Ask for Seconds

Cheap, healthy and satisfying — the go-to recipe for any occasion that stretches your budget, not your time.

Budget-friendly, practical, and properly satisfying — this braised cabbage with mushrooms is my low-cost, high-flavor weeknight move. Cabbage brings the fiber and vitamins, mushrooms bring depth and extra heft, and the whole thing comes together fast. It smells fantastic, tastes cozy, and behaves nicely alongside whatever else you are serving.

What you need

  • White cabbage — 600 g, thinly shredded
  • Fresh button mushrooms (champignons) — 250 g, sliced or quartered
  • Yellow onion — 1 small (about 80 g), sliced into half-moons
  • Carrot — 1 medium (about 100 g), coarsely grated
  • Tomato paste — 1 tablespoon
  • Vegetable oil — 3 tablespoons
  • Water or vegetable broth — 100 ml
  • Salt
  • Ground black pepper — a pinch
  • Bay leaf — 1
  • Fresh dill — a few sprigs for serving

How to make it

Prep first. Shred the cabbage as thin as your patience allows — thinner strands cook faster and turn silky. Slice the onion into half-moons, grate the carrot on the large holes, and clean the mushrooms before slicing or quartering them, depending on size.

Set a deep skillet or heavy pot over medium heat and warm the oil. Soften the onion until translucent, then stir in the carrot and cook 3–4 minutes until it relaxes. Add the mushrooms and give them 5–7 minutes, stirring occasionally, until their liquid cooks off and they take on a little color.

Fold in the shredded cabbage. Cover and let it steam on medium heat for 5 minutes so it starts to wilt. Pour in the water or broth, add the tomato paste, bay leaf, salt, and black pepper. Mix thoroughly so the paste disperses, drop the heat to low, cover again, and simmer 20–25 minutes until the cabbage is tender. Stir here and there so the bottom stays happy.

About 5 minutes before you call it done, taste and fine-tune the salt and pepper. Take the pot off the heat, pull out the bay leaf, and let the cabbage rest under the lid for 5–10 minutes so the flavors settle in.

Serve it

Spoon it up hot and finish with finely chopped dill. It partners beautifully with mashed potatoes or plain rice, and it also works as a light, stand-alone dinner. Simple, nourishing, and it always delivers.
