What you need

  • 4 large hard-boiled eggs
  • 50 g walnuts (cashews or almonds work too)
  • 1–2 garlic cloves
  • 2 tbsp mayonnaise or sour cream (go with sour cream for a lighter feel)
  • 0.5 tsp mustard
  • Pinch of ground black pepper
  • Salt
  • Fresh dill or parsley for garnish (a few sprigs)

How to make it

Start with a quick prep. Peel the eggs and chop them into chunky pieces. Toast the walnuts in a dry skillet for 2–3 minutes until they smell nutty and warm; that little step wakes up their flavor. Let them cool slightly, then chop in a blender or with a knife. Do not turn them into dust — you want small pieces for texture.

Deal with the garlic: peel, then press it or grate it finely. In a mixing bowl, combine the eggs, garlic, mustard, mayonnaise (or sour cream), pepper, and salt. Mash with a fork until the texture hits your sweet spot — leave some egg bits for a rustic spread or keep going until it is totally smooth.
