What you need

  • Pumpkin, peeled and seeded — 600 g
  • Beef (tenderloin or chuck) — 500 g
  • Potatoes — 400 g
  • Yellow onions — 2 medium
  • Carrot — 1 large
  • Garlic — 3 cloves
  • Olive oil — 3 tbsp total
  • Rosemary — 2 fresh sprigs or 0.5 tsp dried
  • Thyme — a few fresh sprigs or 1/4 tsp dried
  • Salt — 1 tsp, or to taste
  • Black pepper — a pinch
  • Water or broth — 100 ml

How to make it

Step 1 — Prep the beef: Cut the beef into roughly 3 cm cubes. Season with salt and black pepper, add the minced garlic and 1 tbsp olive oil, toss to coat, and let it sit for 15 to 20 minutes. This quick marinade wakes everything up without turning into a project.

Step 2 — Prep the veg: Peel the pumpkin and cut it into cubes about the same size as the beef. Peel the potatoes and slice them into large wedges. Peel the carrot and cut it into rounds or sticks. Slice the onions into half-moons. Keeping pieces similar in size helps everything cook evenly.

Step 3 — Build the tray: In a deep baking dish, combine all the vegetables with the remaining 2 tbsp olive oil, a little more salt and pepper, plus the rosemary and thyme. Toss so the seasoning gets everywhere. Spread the vegetables out, then distribute the beef pieces across the top in an even layer. This keeps the meat juicy while the veggies baste in those drippings.

Step 4 — Add moisture and cover: Pour 100 ml of water or broth into the dish. That little bit creates gentle steam and keeps the whole thing tender. Cover tightly with foil, sealing the edges so the steam stays put.

Step 5 — Roast: Slide the dish into a preheated 180 C oven (about 350 F) and bake for 1 hour. Remove the foil and roast another 15 to 20 minutes to get a lightly browned top and some caramelized edges.
