Classic apple charlotte is lovely, but the cottage cheese twist does it better. It keeps the airy crumb you want, dials back the sweetness, and sneaks in extra protein and calcium without getting heavy. Apples bring a clean tart snap and juiciness, so the whole thing lands in that sweet spot between cozy and fresh. Simple to make, looks quietly celebratory on the table, and perfect for a family tea situation.
What you need
- Cottage cheese (5–9% fat) — 200 g
- Apples — 3 medium (about 400 g)
- Eggs — 3
- Sugar — 150 g (or to taste)
- All-purpose wheat flour — 120 g
- Baking powder — 1 tsp
- Vanilla sugar — 1 tsp
- Ground cinnamon — 0.5 tsp (optional)
- Butter — 10 g (for greasing the pan)
How to make it
Prep the apples first. Rinse, core, and peel them if the skins are tough, then cut into small cubes. If you are a cinnamon person, toss the cubes with the ground cinnamon now so the aroma has a head start.
In a mixing bowl, beat the eggs with the sugar and vanilla sugar until lightly foamy. Add the cottage cheese and mix until smooth; a mixer on low speed helps you get an even texture without overworking anything. In a separate bowl, whisk the flour with the baking powder, then add it gradually to the wet mixture, stirring gently. You are aiming for a batter that is thick but still pourable.
Heat the oven to 180°C. Grease your baking pan with the butter and dust it lightly with flour. Pour in half the batter and spread it out, scatter half the apples evenly on top, add the remaining batter, then finish with the rest of the apples on the surface. This layering keeps the fruit distributed all the way through instead of sinking to the bottom.
Bake for 35–40 minutes, until the top is golden. A wooden skewer should come out dry when it hits the center. Let the charlotte rest in the pan for 10–15 minutes, then loosen the edges and transfer it carefully to a plate.
Serve it
Serve warm or fully cooled. Dress it up with a dusting of powdered sugar, a few mint leaves, or a scoop of vanilla ice cream if you want it to read more dessert than afternoon snack. Either way, expect a softer, less-sweet slice than the usual version, with that gentle cottage cheese richness and bright apple lift.
