A classic Jewish casserole that can lean sweet or savory depending on the mood. This version goes savory with potatoes and onions for something hearty, aromatic, and family-friendly. The method is straightforward, and the result feels a lot fancier than the effort you put in.

Ingredients

You will need: 1 kg potatoes; 2 large onions; 3 large eggs; 3 tbsp wheat flour; 2 tbsp vegetable oil; 1 tbsp butter for the pan; 1/2 tsp salt (or to taste); 1/4 tsp ground black pepper (optional); a pinch of nutmeg (optional); fresh dill or parsley for serving (optional).

How to make it

  1. Prep the base: Peel the potatoes and grate them on the coarse side. Peel and finely chop the onions. To keep the texture from going soggy, squeeze the grated potatoes lightly with your hands or leave them in a colander to drain for 5–10 minutes.
  2. Mix: In a large bowl, combine the grated potatoes and chopped onions. Add the eggs, flour, vegetable oil, salt, plus the pepper and nutmeg if you like. Stir until everything is evenly coated and cohesive.
  3. Get the oven and pan ready: Heat the oven to 180 C. Butter a baking dish so nothing sticks. Spoon in the potato-onion mixture, spread it into an even layer, and press it down gently with a spoon.
  4. Bake: Slide the dish into the hot oven and bake for 45–50 minutes, until the top turns deeply golden and crisp. A toothpick should glide in easily when it is done.
  5. Finish and slice: Let the kugel rest for 5–7 minutes so it sets up and is easier to cut. Slice into portions and move to plates.

Serving tip

Serve hot, scattered with fresh dill or parsley if you have it. It clicks with a spoon of sour cream, crunchy fresh vegetables, or a light salad on the side.
