Skip the pricey appetizers—this quick, crowd-pleasing salad disappears first.

This is the salad I pull out when I want big flavor, real heft, and exactly zero fuss. It takes 15 minutes, costs next to nothing, and somehow vanishes from the table before anything else. The lineup is humble — canned red beans, carrots, onions, and pickles — but the result eats like a meal. High payoff, minimal effort.

What you need

  • Red beans, canned — 1 can
  • Yellow onion — 2
  • Carrots — 2
  • Pickled cucumbers — 3 to 4
  • Salt, black pepper, vegetable oil — to taste

How to make it

1. Prep the aromatics: Dice the onions. Coarsely grate the carrots.

2. Build the base: In a skillet with a slick of vegetable oil, sauté the onions and carrots over medium heat until they turn golden and sweet. That color is the flavor — give it a minute.

3. Add the crunch: Dice the pickles into small cubes.

4. Ready the beans: Drain the can, rinse the beans under cool water, and shake off excess moisture.

5. Bring it together: In a mixing bowl, combine the beans, the warm sautéed onions and carrots (oil from the pan included), and the diced pickles. Season with salt and black pepper to taste. Toss until glossy and well mixed.

Serve right away for warmth and snap, or let it rest for 10 minutes so the flavors settle in and get friendly. Either way, expect an empty bowl.
