You will need: 500 ml milk, 250 ml water, 3 tbsp semolina (lightly heaped), 1 tsp sugar, a pinch of salt, 5 g butter (about 0.5 tsp). For the topping lineup: berries, honey, or jam, if you like.

The short story: heat gently, add slowly, whisk like you mean it

  1. Pour the milk and water into a saucepan and set over medium heat. Warm it until you see the first small bubbles gathering around the edges, then immediately drop the heat to low.
  2. Here is the smooth-porridge secret: sprinkle in the semolina in a fine, steady stream while stirring constantly with a whisk or spoon. Take your time so every grain gets swept into the liquid instead of clumping with its friends.
  3. Keep the stirring energy up for 2–3 minutes, just until the mixture starts to thicken. Add the salt and sugar and stir so they fully dissolve.
  4. Let it cook another 1–2 minutes on the lowest heat, still stirring. You want a uniform, slightly thick texture that will tighten a bit more as it cools.
  5. Take the pan off the heat, add the butter, and gently stir it in. This adds a soft, creamy flavor and helps keep a skin from forming on top.
  6. Cover the pan and let the porridge rest for 3–4 minutes. That little pause lets it finish cooking and turn extra tender.

Serve it
