What you need

  • Whole-grain or rye bread - 2 slices (about 60 g)
  • Eggs - 2
  • Hard cheese - 40 g
  • Fresh tomato - 0.5 piece (about 50 g)
  • Butter - 10 g
  • Salt - a pinch
  • Ground black pepper - a pinch
  • Fresh herbs (dill or parsley) - a few sprigs for serving

How to make it

Step 1: Prep the basics. Slice the tomato into thin rounds or small wedges. Grate the cheese on the coarse side so it melts into a nice blanket. Finely chop the herbs and set them aside for the finish.

Step 2: Butter one side of each bread slice. That side will go up in the oven and turn beautifully crisp. Set the slices on a baking sheet or in a small baking dish, buttered side facing up.

Step 3: Use the back of a spoon to press a shallow well in the center of each slice. Keep the bread intact without poking through. Crack an egg into each well, aiming to keep the yolk whole for the best look. Season with a pinch of salt and pepper.

Step 4: Tuck the tomato pieces around the egg, then shower the top with the grated cheese. The cheese will melt into a golden crust while the tomato adds juiciness and brightness.

Step 5: Slide the tray into a 180°C oven (about 355°F) and bake for 8 to 10 minutes. Watch closely near the end: the white should be fully set while the yolk stays a little runny. That soft center is the sweet spot.

Serve it

Lift the sandwiches onto plates, scatter over the fresh herbs, and bring them to the table hot. Great with coffee or tea, and surprisingly perfect with a cold glass of tomato juice.
