Stop Boiling Oatmeal—Bake It Crunchy for a Dessert-Worthy Breakfast with Yogurt, Cherries, and Honey

This is the oatmeal I make when I want breakfast to feel like a treat but still behave like a weekday. Think crisp, toasty clusters that smell like a bakery and crunch like granola, layered with cool yogurt and a glossy cherry sauce. It takes a few basic ingredients, one baking sheet, and 15 minutes in the oven. After the first batch, I stopped cooking oatmeal any other way.
What you need
- Rolled oats - 100 g
- Honey - 30 g
- Olive oil - 5 ml
- Salt - a pinch
- Nutmeg - optional, to taste
- Nuts (hazelnuts or any you like) - 50 g
- Plain yogurt or kefir - as much as you want for serving
- Frozen cherries - 100 g
- Sugar - 30 g
- Cornstarch - 2-5 g
Make the crunchy oats
Heat the oven to 180°C. In a bowl, combine the oats, honey, olive oil, salt, chopped nuts, and a whisper of nutmeg if you like it warm and cozy. Spread everything in an even layer on a baking sheet.
Bake for 10-15 minutes, pulling the tray out a couple of times to stir so the edges do not race ahead. You are aiming for a uniform golden color and a firm, crisp texture. The moment the oats smell toasty and snap when you push them around, they are ready. Let them cool on the tray so they set into light, crunchy clusters.
Cook the cherry sauce
Set the frozen cherries and sugar in a small saucepan over medium heat. As the fruit warms, it will release juice; if the pan looks dry at the start, add a splash of water to help it along. Bring to a gentle simmer.
In a separate cup, stir the cornstarch with a little cold water until smooth. While the cherries bubble, stream in the slurry, stirring the saucepan the whole time. Keep it on the heat just until the sauce thickens and turns glossy. Take it off the stove and let it cool to room temperature so it can settle into that perfect spoonable consistency.
Assemble and eat
Spoon a layer of the cherry sauce into a glass or bowl. Add a cloud of plain yogurt or pour in cold kefir. Finish with a generous heap of the crunchy oats on top. The contrast is the point: cool and tangy, warm and spiced, crisp and soft. Breakfast that reads like dessert, minus the sugar crash.
