A light, Italian-inspired recipe is taking weeknights by storm — fast to make, big on flavor, and guaranteed to wow the family.

When I need dinner that looks polished but asks very little of me, I reach for chicken piccata. Tender cutlets, a bright lemon-butter sauce, a few capers for attitude — it cooks fast, tastes bigger than the effort, and lands on the table looking restaurant-level. You can push it bolder or keep it extra light, so the whole family stays happy. Ideal for a weeknight or when friends text that they are 'five minutes away'.

What you need

  • Chicken breast fillets — 400 g
  • All-purpose flour — 2 tbsp
  • Lemon — 1
  • Garlic — 2 cloves
  • Capers — 1 tbsp
  • Fresh parsley — 5–6 sprigs
  • Chicken broth — 100 ml
  • Dry white wine — 50 ml
  • Butter — 40 g
  • Olive oil — 1 tbsp
  • Salt — to taste
  • Freshly ground black pepper — a pinch

How to make it

Step 1: Turn the chicken breasts into quick-cooking cutlets. Slice each breast horizontally to make two thinner pieces, then give them a light, even pound on both sides. Season with salt and black pepper, dust with flour, and shake off the excess so the coating stays thin.

Step 2: Set a skillet over high heat and warm the olive oil. Sear the chicken for 2–3 minutes per side until the surfaces turn golden. Move the cutlets to a plate and tent with foil to keep them warm.

Step 3: In the same pan, melt half the butter. Add the finely chopped garlic and cook for about 30 seconds, just until aromatic. Pour in the white wine and let it reduce for about 1 minute. Stir in the chicken broth, the juice from half the lemon, and the capers. Simmer 2–3 minutes until the sauce slightly thickens.

Step 4: Slide the chicken back into the pan and spoon the sauce over the cutlets. Let everything gently mingle on low heat for 1–2 minutes. Finish with the remaining butter and a handful of chopped parsley, swirling the pan until the sauce turns glossy and lush.

Serve it right

Send it out hot with plenty of sauce. It pairs cleanly with steamed rice, mashed potatoes, or a tangle of pasta. Add lemon wedges and a little parsley on top for a fresh finish. Want more punch? Lean into the lemon and capers. Prefer it lighter? Keep the flavors soft and bright and let the chicken and parsley do the talking.
