Soft middle, crisp edges, and that cozy garlic aroma that makes the kitchen feel like a hug. This beginner-friendly garlic flatbread delivers all of that with minimal fuss. If you are new to yeasted dough, this is a low-stress place to start, and the payoff is big.

What you need

  • Wheat flour – 300 g, plus a little extra for dusting
  • Warm water – 180 ml
  • Dry yeast – 1 tsp
  • Sugar – 1 tsp
  • Salt – 0.5 tsp
  • Olive oil – 2 tbsp (1 tbsp for the dough, 1 tbsp for brushing)
  • Garlic – 2 to 3 cloves
  • Fresh parsley – a few sprigs
  • Hard cheese (optional) – 30 g, finely grated

How to make it

Wake up the yeast: Stir the sugar and dry yeast into the warm water and let it sit for about 10 minutes until it looks foamy. In a large bowl, combine the sifted flour and salt, pour in the yeast mixture and 1 tbsp olive oil, then knead until the dough turns soft and elastic. Move it to a clean bowl, cover with a towel, and set it somewhere warm for about 1 hour, until it doubles in size.

Mix the topping while you wait: Press the garlic through a garlic press and finely chop the parsley. Stir both together with the remaining 1 tbsp olive oil. If you want extra aroma and a slightly more indulgent crust, add the finely grated hard cheese to this mixture. I do not mind a heavy hand here.

Shape and season: Deflate the risen dough and place it on a lightly floured surface. Roll it into a round about 1 cm thick. Transfer to a parchment-lined baking sheet. Brush the top evenly with the garlic-parsley oil. If cheese makes you happy (same), sprinkle a little more on top.

Bake to gold: Heat the oven to 200°C. Score the surface with shallow crosshatch cuts so it bakes evenly and looks a bit dressed up. Bake for 15–20 minutes, until the top turns a pleasing golden color and the edges crisp up.

Let it rest briefly, slice, and serve warm. It pairs well with soups, stews, and bright vegetable salads, or keep it simple with a bowl of sour cream and chopped herbs. For a weeknight win or your first date with yeast, this one delivers.
