File this under minimal effort, maximum payoff. Turkey langet sounds fancy, but it is simply thin, breaded cutlets made from turkey breast. They cook fast, stay juicy, look a bit celebratory, and still work for a weeknight. Bonus: turkey is high in protein, low in fat, and gentle enough for kids.

What you need

Grab 500 g turkey breast fillet and slice it across the grain. You will also need 1 large egg; 3 tablespoons breadcrumbs; 2 tablespoons wheat flour; about 0.5 teaspoon salt; 1/4 teaspoon ground black pepper; 1 teaspoon dried oregano if you like a herbal nudge; 3-4 tablespoons vegetable oil for frying; and 1 tablespoon butter for extra aroma if you are in the mood. For the finish, parsley or dill is perfect.

How to make it

  1. Prep the cutlets: slice the turkey fillet across the grain into pieces about 1-1.5 cm thick. Gently pound each piece on both sides to 0.5-0.7 cm. That thinness is the secret to tenderness.
  2. Season the meat evenly with the salt, pepper, and oregano. Let it sit for 5-10 minutes so the spices do their thing.
  3. Set up three shallow bowls: flour in the first; the egg, lightly beaten with a fork, in the second; breadcrumbs in the third.
  4. Bread each piece in order: dust with flour and shake off the extra, dip fully in the egg, then coat thoroughly in breadcrumbs, pressing a little so they stick. This gives you a crisp shell and keeps the juice inside.
  5. Heat a skillet over medium. Add the vegetable oil and the butter if using. When the fat is hot, lay in the cutlets. Cook 2-3 minutes per side until golden. After you flip, you can cover the pan for 1 minute to help the heat penetrate evenly.
  6. Move the cutlets to a plate lined with paper towel to wick off excess oil. Let them rest 2-3 minutes so the juices redistribute.

Serve it

Send them out hot with a scatter of chopped parsley or dill. They are great with mashed potatoes, plain rice, stewed vegetables, or a light salad. Weeknight simple, dinner-party presentable.
