Reinvent Greek Salad as Crunchy Toast Bites the Whole Family Will Love

Greek salad is a classic for a reason, but sometimes it needs a new outfit. Pile those fresh, salty, crunchy flavors onto crisp little croutons and you get an easy, elegant bite that looks like a party and eats like a canape. This one brings bright veggies, creamy feta, and toasty bread together without any fuss. Great for a laid-back dinner, a picnic spread, or when friends appear and you want to look like you planned it.
What you will need
- Whole-grain bread or a baguette — 200 g
- Cherry tomatoes — 150 g (about 10–12)
- Fresh cucumber — 1 (about 120 g)
- Yellow or red bell pepper — 1 (about 150 g)
- Red onion — 1/2 (about 40 g)
- Pitted olives — 80 g
- Feta — 100 g
- Olive oil — 3 tbsp
- Lemon juice — 1 tbsp
- Dried oregano — 1/2 tsp
- Salt — a pinch
- Freshly ground black pepper — a pinch
Make the crunch
Cut the bread into cubes about 2 x 2 cm. Warm 1 tbsp olive oil in a skillet over medium heat, add the bread, and toast, stirring now and then, until golden and crisp, 5–7 minutes. Transfer to a plate and let the croutons cool so they stay crunchy.
Prep the salad
Halve the cherry tomatoes. Slice the cucumber into half-moons. Cut the bell pepper into thin strips. Slice the red onion into thin half-rings. Leave the olives whole or halve them. Cut the feta into small cubes, roughly matching the size of the tomato halves.
Shake up the dressing
In a small bowl, whisk the remaining 2 tbsp olive oil with the lemon juice, dried oregano, a pinch of salt, and a pinch of black pepper until smooth.
Toss and rest
In a large bowl, gently combine the tomatoes, cucumber, bell pepper, red onion, olives, and feta. Pour over the dressing and toss carefully so the feta keeps its shape. Let it sit for 5 minutes to mingle the flavors.
Serve it right
Spoon the salad onto a serving plate and scatter the cooled croutons over the top. Bring it to the table immediately so the bread stays crisp. It works beautifully as bite-size canapes, and it plays nicely with a chilled white wine, cold juice, or lemonade.
