Light chicken broth, deep mushroom umami and bulgur’s nutty heft unite in the season’s breakout comfort bowl.

This is the soup I make when I want comfort without the food coma: light chicken broth, deep mushroom flavor, and bulgur that actually keeps you full. It is simple, fragrant, and satisfying without feeling heavy. The texture is spot-on thanks to bulgur, and mushrooms bring that woodsy aroma that makes the whole kitchen smell like you meant to cook.

Chicken keeps the broth clean and gentle. Bulgur adds a tender bite and brings more fiber than a lot of other grains, so the bowl feels substantial. Mushrooms layer in a rich, earthy depth that plays beautifully with the sweet onions and carrots. You get aroma, flavor, and balanced texture in one pot.

What you need

  • Chicken fillet – 300 g
  • Bulgur – 80 g
  • Fresh button mushrooms – 200 g
  • Potatoes – 2 medium (about 200 g total)
  • Carrot – 1 (about 100 g)
  • Onion – 1 (about 80 g)
  • Vegetable oil – 2 tbsp
  • Bay leaf – 1
  • Salt and freshly ground black pepper – to taste
  • Fresh parsley – a few sprigs for serving
  • Water – 1.5 liters

How to cook it

Start with the broth. Rinse the chicken fillet, place it in a pot, cover with 1.5 liters of cold water, and bring to a boil. Skim off any foam, lower the heat, and simmer for 20-25 minutes until the chicken is cooked through. Lift the fillet out, let it cool slightly, then cut it into small cubes.

Build the flavor base. Peel the onion and carrot. Finely chop the onion and coarsely grate the carrot. Warm 2 tablespoons of vegetable oil in a skillet and cook the onion and carrot over medium heat until soft, about 5 minutes. Clean the mushrooms (a quick wipe or rinse), slice them, and add to the skillet. Cook for another 5-7 minutes until the mushrooms take on a little color.

Bring it together. Peel the potatoes and cut them into cubes. Return the chopped chicken to the pot. Add the potatoes and 80 g of bulgur. Bring back to a gentle boil, lower the heat, and simmer for about 15 minutes, until the potatoes and bulgur are tender.

Finish and rest. Stir in the sautéed vegetables and mushrooms, drop in the bay leaf, and season with salt and a pinch of black pepper. Let it simmer on low for 5 minutes. Take the pot off the heat, cover, and let the soup stand for 10 minutes so the flavors settle in.

Ladle into bowls and finish with finely chopped fresh parsley. Eat it hot, enjoy the aroma, and appreciate how a light broth can still feel like a full meal.
