What you need
- Cauliflower — 1 head (about 800 g)
- Eggs — 3
- Hard cheese — 150 g
- Milk — 100 ml
- Garlic — 2 cloves
- Butter — 20 g
- Salt — to taste
- Black pepper, ground — a pinch
- Fresh parsley — a few sprigs for serving
How to make it
Step 1: Break the cauliflower into florets, rinse well, and simmer in lightly salted water for 5–7 minutes until just tender but still holding shape. Drain in a colander, let excess water run off, and cool slightly so it stops steaming.
Step 2: In a bowl, whisk the eggs with the milk, a pinch of salt, and black pepper until smooth. Press the garlic through a garlic press (or mince it very finely) and stir it into the egg-milk mixture.
Step 3: Coarsely grate the cheese. Butter a baking dish with the 20 g of butter. Spread the drained florets in an even layer, pour over the egg mixture so it seeps between the pieces, and blanket the top with the grated cheese.
Step 4: Bake at 180 C for 25–30 minutes, until the top is golden and the custard has set. You are looking for a nicely browned cheese crust and a firm, sliceable center.
