These honey cream balls are pure throwback dessert energy: tender, fragrant, just sweet enough, and easy to pull off on a weeknight. Think tea-time crowd-pleaser with minimal drama. If you can stir and roll, you can make them.

What you will need

  • Honey — 150 g
  • Granulated sugar — 100 g
  • Unsalted butter — 100 g
  • Eggs — 2
  • All-purpose wheat flour — 400-450 g (about 3 cups measured in 200 ml cups)
  • Baking soda — 1/2 tsp
  • Vanilla sugar — 1 tsp
  • Sour cream 20% — 300 g
  • Powdered sugar — 100 g

How to make them

Step 1: Make the base. In a small saucepan, combine the honey, granulated sugar, and butter. Warm over low heat, stirring the whole time, until the mixture turns smooth and glossy and the sugar and butter have fully melted. Take it off the heat and let it cool slightly so it is warm, not hot.

Step 2: Build the dough. In a mixing bowl, whisk the eggs with the vanilla sugar until lightly foamy. While whisking, slowly stream in the warm honey-butter mixture. In a separate bowl, mix the sifted flour with the baking soda. Add the flour mixture gradually to the egg-honey mixture and knead until you have a soft, elastic dough that feels easy to handle. Wrap in plastic and chill for 30 minutes to firm it up for shaping.

Step 3: Shape and bake. Heat the oven to 180 C. Divide the chilled dough into small portions and roll into balls about the size of a walnut. Line a baking sheet with parchment and set the balls on it with 3-4 cm of space between them. Bake for 12-15 minutes until they take on a light golden color. Transfer to a rack and let them cool completely.

Step 4: Whip the cream. In a bowl, beat the sour cream (20%) with the powdered sugar until smooth and thick.

Finish and serve

Once the baked balls are fully cool, dip each one in the sour cream mixture and arrange on a serving plate. If you feel like dressing them up, shower over some grated chocolate, coconut flakes, or chopped nuts. Slide the whole thing into the fridge for 1-2 hours so the flavors settle in and the texture turns lush. Then make tea and pretend you planned all of this days ago.
