A new contender is taking on the classics, serving flavors so irresistible that stopping is the hardest part.

If basic syrniki feel tired, this potato-and-mozzarella spin wakes them right up. Think soft mashed potato inside, stretchy cheese pockets, and a crisp, golden edge. Hearty, aromatic, and surprisingly hard to stop at one.

What you need

  • 500 g potatoes (about 3 to 4 medium), peeled
  • 150 g mozzarella, preferably the firm pizza-style
  • 200 g cottage cheese, 5 to 9% fat
  • 1 large egg
  • 3 tbsp all-purpose flour, plus extra for dusting
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp ground black pepper
  • Pinch of dried thyme (optional)
  • Neutral vegetable oil for frying

How to make them

Start with the potatoes. Cut them into cubes, boil until tender (15 to 20 minutes), and drain well. Mash to a smooth puree and let it cool off a bit so it is just warm.

In a separate bowl, mix the cottage cheese with the egg, salt, pepper, and thyme until uniform. Fold in the warm mashed potato and finely chopped mozzarella. Stir so the cheese is evenly dispersed.

Sprinkle in the flour gradually, mixing as you go, until you have a soft dough that barely clings to your hands. If it stays tacky, work in 1 to 2 more teaspoons of flour.

With lightly floured hands, shape small round patties about 1.5 cm thick. Dust each one lightly with flour. This sets you up for an even crust and smooth release from the pan.

Heat a skillet over medium with a thin film of oil. Fry the patties for 3 to 4 minutes per side until golden. Keep the heat moderate so the centers warm through and the mozzarella starts to melt without scorching the outside.

Move the finished syrniki to a plate lined with paper towel to wick away excess oil.

To serve

Bring them to the table hot. Spoon over sour cream, scatter fresh herbs, or swipe through a simple tomato sauce. Different mood, same result: clean plates.
