Feather-light, sweet, and a little fragrant in the best way — dorayaki are the kind of breakfast-or-dessert that makes people think you tried harder than you did. These are traditional Japanese stuffed pancakes that cook on a dry skillet, no oil, so they stay plush and a touch lighter than your usual griddled situation. If you want to surprise your crew with something simple, pretty, and very snackable, this is it. Kids inhale them. Adults pretend not to.
What you need
- Eggs — 2
- Sugar — 50 g
- Runny honey — 1 tbsp
- All-purpose flour — 130 g
- Baking powder — 1 tsp
- Warm water — 50 ml
- Salt — a pinch
- Filling (choose one: anko red bean paste, dulce de leche, chocolate cream, or thick jam) — 6–8 tsp total
Make the batter
In a mixing bowl, whisk the eggs with the salt and sugar until you see a light foam. Stir in the honey and warm water until smooth. Sift the flour with the baking powder, then add it gradually while whisking so you get a silky batter without lumps. You want it a bit thicker than standard pancake batter, with tiny bubbles lingering on the surface. Let it rest 5–10 minutes so it puffs up a touch more.
Cook the pancakes
Heat a dry nonstick skillet over medium. No oil — that is part of the magic here. Scoop in 1 tablespoon of batter, holding the spoon straight up so the batter drops in place and spreads itself into a neat circle.
Cover the skillet with a lid and cook until bubbles appear and the top sets, about 1–2 minutes. When the bubbles start to pop, flip gently and cook the second side just 10–15 seconds, until lightly golden. Repeat with the remaining batter.
Fill and assemble
Take one warm pancake and add a teaspoon of your chosen filling. Spread it out, stopping short of the edges. Cap it with a second pancake and press lightly around the rim — you want the filling to nudge toward the perimeter without oozing out.
Serve
Dorayaki work warm or cooled, and they pair especially well with green tea, cocoa, or warm milk. They are airy, plush, and just sweet enough — basically a guaranteed crowd-pleaser any time of day.
