What you need
- Whole-grain bread or a baguette, 200 g (8-10 thin slices, about 1 cm thick)
- Brie, 150 g
- Fresh strawberries, 150 g (about 10-12 berries)
- Liquid honey, 2 tbsp
- Olive oil, 1 tbsp
- Balsamic glaze, 1 tsp for garnish (optional)
- Fresh thyme, a few sprigs for serving
- Salt, a pinch
- Freshly ground black pepper, a pinch
How to make it
Heat the oven to 180 C. Slice the bread into pieces about 1 cm thick. Brush both sides with olive oil, then season with a light pinch of salt and pepper. Set the slices on a baking sheet and toast for 5-7 minutes until they reach a pale golden color. Pull them at that point to keep a crisp edge and a soft center.
While the bread toasts, get the toppings ready. Rinse and dry the strawberries, then slice them thin; quartering works well if the berries are on the larger side. Take the brie out ahead so it softens a bit for easier spreading, and trim the rind if that is your preference.
Spread each warm slice of bread with a thin layer of brie. Lay on the strawberry slices in a single, tidy layer. Drizzle a little honey over the top so the berry sweetness shines and the cheese tastes even creamier. For a finishing touch, add a small sprig of fresh thyme and a few drops of balsamic glaze.
Serve it right
