What you need
- 500 g pike-perch fillet
- 1 small onion, about 80 g
- 1 garlic clove
- 50 g white bread, crusts removed
- 2 tbsp milk
- 1 egg
- 2 tbsp breadcrumbs
- 0.5 tsp dried dill
- A pinch of ground nutmeg
- Salt, about 0.5 tsp
- Freshly ground black pepper
- 2 to 3 tbsp neutral oil for frying
- 300 ml fish or vegetable broth, for braising
How to make it
Step 1: Soak the bread in the milk for 5 to 7 minutes. Meanwhile, turn the fish into a smooth mince using a meat grinder or a food processor.
Step 2: Finely chop the onion and garlic or run them through the grinder too. Squeeze the milk from the bread and add it to the fish along with the onion, garlic, egg, dried dill, nutmeg, salt, and pepper. Mix until the mixture looks even and cohesive.
Step 3: Roll the mixture into meatballs about 4 cm across. Coat each one in breadcrumbs. This light jacket helps them hold their shape and gives a delicate crust.
Step 4: Warm a skillet over medium heat with the oil. Fry the meatballs on all sides to a gentle golden color, about 2 to 3 minutes per side. Aim for a blush of gold rather than a deep sear to keep the texture tender.
Step 5: Pour in the broth, cover the pan, and let the meatballs simmer on low for 10 to 12 minutes. They will take on the aroma of the spices and turn even softer inside.
Serve it
