Meet Your New 15-Minute Nightcap: Creamy Coffee Eggnog That Warms and Perks You Up

If classic eggnog feels a little too predictable, this coffee version changes the mood in the best way. It is silky, creamy, lightly spiced, and scented with coffee. The whole thing feels festive and cozy, warms you up on a cold day, and brings just enough caffeine to keep the conversation moving. It is also straightforward to make, which I appreciate.
What you need
- Milk: 250 ml
- Cream 20%: 150 ml
- Eggs: 2 (you will use the yolks)
- Sugar: 50 g (about 3 tbsp)
- Instant coffee: 1 tsp
- Vanilla sugar: 1 tsp
- Ground cinnamon: 1/4 tsp
- Ground nutmeg: a pinch
- Grated chocolate or extra cinnamon for garnish (optional)
How it comes together
Start with the yolks. Separate the eggs and beat just the yolks with the sugar and vanilla sugar until the mixture looks a bit paler and the sugar crystals dissolve.
Warm the dairy. In a small saucepan, combine the milk and the cream and heat over medium until it is hot but not boiling. The moment you see the first tiny bubbles hugging the sides, take it off the heat. Slowly stream this hot mixture into the yolks while stirring constantly so the eggs stay smooth, then pour everything back into the saucepan.
Thicken gently. Set the pan over low heat and keep whisking as it cooks until the mixture lightly thickens. Aim for control, not speed: the temperature should stay under 70-75 C so the yolks do not curdle. As soon as the custard coats the back of a spoon, pull it off the heat.
Add the coffee and spice. Dissolve the instant coffee in 2-3 tbsp warm water and stir it into the custard base. Add the cinnamon and a pinch of nutmeg, then stir again until smooth.
Serve it
Pour the eggnog into mugs while hot. Finish with grated chocolate or a dusting of cinnamon if you like. The result is festive, comforting, and quietly energizing. Easy to pull off, and it will make both you and your guests very happy.
