What you need
- 500 g potatoes (go for waxy types that keep their shape)
- 150 g bacon (smoked or dry-cured both work)
- 1 fresh cucumber
- 1 small red onion
- 3 hard-boiled eggs
- A small bunch of green onions, about 20 g
- 2 tbsp vegetable oil
- 1 tbsp apple cider vinegar
- 1/2 tsp mustard (regular or Dijon)
- Salt
- Freshly ground black pepper
How to make it
Get the potatoes going first. Scrub them well, drop them into a pot, cover with cold water, and bring to a boil. Cook at a steady simmer for 15-20 minutes until a fork slides in without a fight. Drain, let them cool just enough to handle, peel, and cut into medium cubes. You want pieces that hold together when tossed.
While the potatoes do their thing, slice the bacon into small strips. Cook it in a dry skillet over medium heat until crisp, about 3-4 minutes. Transfer the bacon to a plate lined with paper towel so the excess fat has somewhere to go.
Dice the cucumber. Slice the red onion into thin half-moons so it blends rather than bulldozes. Chop the hard-boiled eggs into tidy cubes. Finely slice the green onions.
Whisk together the dressing in a small bowl: vegetable oil, apple cider vinegar, mustard, a good pinch of salt, and black pepper. Whisk until it looks glossy and unified.
In a large bowl, combine the warm potato cubes with the cucumber, red onion, eggs, and bacon. Toss gently so you do not mash the potatoes. Pour over the dressing and toss again to coat evenly. Let the salad stand at room temperature for 10-15 minutes so the flavors settle in and get friendly.
