Inspired by the Malabar region on India’s southwest coast, this recipe leans into the area’s love of potatoes, eggs, and heady spices. Think simple structure, big aroma, and a finish that’s hearty without feeling heavy. It is a modern, home-cook-friendly take on that flavor logic: straightforward, filling, and very satisfying.

What you need

For the potato base: 1 kg potatoes; 1 onion; 1 tsp ground cumin; 1/2 tsp ground turmeric; 4 tbsp rapeseed oil (swap-friendly with any neutral vegetable oil); fine sea salt to taste; 4 eggs; fresh cilantro for serving.

For the tomato chutney: 350 g ripe tomatoes; 1 tbsp lime or lemon juice; 1 tsp chipotle flakes or another hot pepper; 3 garlic cloves; 3/4 tsp fine salt; 1 tbsp rapeseed oil.

How to make it

  1. Heat the oven to 200°C (or 180°C with a fan). Line a 30x40 cm sheet pan with parchment and lightly oil it.
  2. Make the chutney first: combine all chutney ingredients in a bowl and let it stand while the base bakes so the flavors open up.
  3. Prep the potatoes: coarsely grate, transfer to a bowl, and let sit 5 minutes. Squeeze out as much liquid as possible — this step is the key to a crisp crust.
  4. Mix the base: return the squeezed potatoes to the bowl and add thinly sliced onion, cumin, turmeric, 4 tbsp oil, and 1/2 tsp salt. Stir to coat.
  5. Bake the base: spread the mixture edge to edge on the prepared pan and bake for 40 minutes.
  6. Add the eggs: pull out the pan. Using the back of a spoon, make 4 wells and crack 1 egg into each.
  7. Finish: slide the pan back in for 8–10 minutes, until the whites are set and the potatoes are golden.
  8. Serve: shower with chopped cilantro and a pinch of fine sea salt, cut into portions, and bring the chutney to the table.

Smart tweaks

Crispier base: after grating, wring the potatoes in a clean kitchen towel for maximum moisture removal.

Runny yolks: bake the eggs 6–8 minutes and keep an eye on the whites for setness.

Make-ahead move: the chutney keeps in the fridge for a couple of days.
