Hearty, golden-brown and impossible to resist, a new wave of comfort food is storming local menus and winning over even the pickiest diners.

When you want something hearty, golden, and straight-up comforting without a scavenger hunt for ingredients, make placinte. These Moldovan stuffed flatbreads are simple, fragrant, and a smart move for a family lunch or that text that says 'Hey, we’re five minutes away.'

What we’re making

Placinte are thin, pan-fried flatbreads folded around a warm potato-onion-herb filling. They come off the skillet deeply bronzed, then get a quick egg gloss for that handsome bakery look. Minimal effort, maximum payoff.

Ingredients

  • Dough: wheat flour 500 g
  • Dough: warm water 250 ml
  • Dough: 1 egg
  • Dough: salt 1/2 tsp
  • Dough: vegetable oil 2 tbsp
  • Filling: boiled potatoes 400 g
  • Filling: 1 large onion
  • Filling: fresh dill and parsley, small bunch
  • Filling: salt and black pepper to taste
  • Filling: butter 30 g
  • For brushing: 1 egg

Make the dough

In a mixing bowl, whisk together the warm water, egg, salt, and vegetable oil. Start adding the sifted flour gradually and knead until the dough turns smooth and elastic. Cover the bowl with plastic wrap and let the dough rest for 30 minutes at room temperature. That pause makes it easier to roll thin later.

Prep the filling

Mash the boiled potatoes until creamy. Finely chop the onion and sauté it in a little oil over medium heat until golden. Stir the onion into the potatoes, add the finely chopped dill and parsley, season with salt and black pepper to taste, and work in the butter so the filling turns plush and silky.

Shape and cook

Divide the rested dough into 4–5 pieces. Roll each one into a thin round. Spoon 2–3 tbsp of filling into the center, bring the edges together to seal, then gently flatten the parcel with your hand so it cooks evenly.

Film a skillet with a little oil and heat it over medium. Fry each flatbread on both sides until a deep golden crust forms. You want color here—that is the flavor talking.

Finishing touch

Beat the remaining egg and brush it over the hot placinte for a glossy finish. Serve right away with sour cream or whatever sauce you love with potatoes. Hot and happy is the move here.
