When the day calls for something warm, creamy, and a touch nostalgic, this silky chicken curry soup steps up. It is cozy without being heavy, gently spiced, and the kind of bowl that turns a so-so afternoon into a decent evening.

Ingredients

  • 400 g chicken breast, cut into small pieces
  • 1 liter chicken broth (or water)
  • 2 medium potatoes, diced
  • 1 carrot, coarsely grated
  • 1 onion, diced
  • 200 ml cream, 10–15% fat
  • 1 tsp curry powder (a little more to taste works well)
  • 0.5 tsp turmeric
  • 2 tbsp vegetable oil
  • Salt, about 0.5 tsp to start
  • Freshly ground black pepper
  • A bunch of fresh parsley, for serving

How it comes together

Prep the base: peel and dice the onion and potatoes; coarsely grate the carrot. Rinse and pat dry the chicken, then cut it into bite-size pieces so it cooks evenly.

Build flavor: warm the oil in a deep pot over medium heat. Add the onion and cook 2–3 minutes until it turns translucent. Stir in the carrot and give it another 3–4 minutes, just until the veggies soften and smell sweet.

Add the protein: slide in the chicken and cook, stirring, for 5–7 minutes until the pieces turn white on all sides.

Make it a soup: add the potatoes, pour in the broth (or water), and bring it to a boil. Lower the heat and let it simmer 15–20 minutes, until the potatoes are fully tender.

Wake up the spices: stir in the curry powder and turmeric and let them bloom for 2–3 minutes so the aroma deepens.

Go creamy: pour in the cream and stir. Keep the heat low and warm the soup for 3–4 minutes. Gentle heat keeps the texture satiny and the cream happy.

Finish and rest: taste, then season with salt and black pepper to your liking. Turn off the heat, cover, and let the soup sit 5–10 minutes so everything settles into a balanced, cozy bowl.
